Fall Food Swoon

🍁Picked up a huge bushel of #beets at the last #summer #farmersmarket last week and had NO idea what to do with them! Who knew they would become my favorite new dish, like, ever?!

Preheat oven to 400 degrees. Clean and trim the beets; wrap the ‘balls’ individually in foil and roast for an hour (or until fork slides in easily). While hot, rub the skin off with a paper towel and slice. Set atop a bed of greens, add some local honey and #goatcheese; and drizzle with #balsamic #vinegar.

My husband went crazy for it, and he’s not one to easily swoon!
